Sweet Potato Quinoa Cornbread
2 T butter, melted
1 egg
1 4-oz. jar baby food sweet potatoes
1 8-oz. carton plain nonfat yogurt
1 c medium-grind cornmeal
1 c quinoa meal *
1 T baking powder
1/2 t salt
2 T Splenda brown sugar blend or 4 T brown sugar
1/2 c coarsely chopped cashews
*I ground it in my coffee grinder, which, since we quite buying whole bean coffee because DH will settle for Folger’s and I hardly drink coffee at home and stop at Starbuck’s on my way to work...I’m such a Starbuck’s snob.
